Finding an appetizer that’s simple in both prep and ingredients can be hard to come by. Cowboy caviar has always been one of my favorite dips and always seems to be a hit at any gathering. This quick & easy cowboy caviar is tangy and fresh, and is the perfect side dish for your next get together.
What You Need:
For the caviar:
1/2 Red onion
1 Green bell pepper
1 Red bell pepper
1 can fire roasted tomatoes
1 can black eyed peas
1 can mixed beans (or pinto or black beans)
1 can corn
1/4 cup chopped cilantro
For the dressing:
1/2 cup olive oil
1/4 cup apple cider vinegar
2 Tbsps honey or sugar
1 tbsp onion powder
1 tbsp garlic powder
Quick & Easy Cowboy Caviar
Ingredients
For the caviar
- 1 red bell pepper chopped
- 1 green bell pepper chopped
- 1 can fire roasted tomatoes
- 1/2 red onion chopped
- 1 can sweet corn
- 1 can black eyed peas
- 1/4 cup cilantro chopped
- 1 can mixed beans (or pinto or black beans)
For the Dressing
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 2 Tbsps honey or sugar
- 1 tbsp onion powder
- 1 tbsp garlic powder
- salt & pepper to taste
Instructions
- Mix together all ingredients for the dressing and set aside
- Dump all other ingredients into a large mixing bowl and stir until well combined
- Pour marinade on top of all ingredients, stir until thoroughly coated
- Place in refrigerator for at least 1 hour before serving
