Organic Gluten & Dairy Free Smash Cake

A first birthday is not complete without a classic smash cake, and the photos that come along are precious! I really wanted my daughter to have a first birthday smash cake, but I didn’t want all of the processed sugar and artificial ingredients that usually comes with a traditional cake. So I decided to give her an organic, gluten & dairy free smash cake and it was amazing! Keep reading for the full recipe!

Organic Gluten & Dairy Free Smash Cake

My mother-in-law is an excellent baker and I knew she would be up for the challenge! We found a recipe that used oats instead of wheat flour and applesauce instead of sugar.

For this cake, I based the recipe on this healthy smash cake recipe from Natasha, but omitted her icing recipe to make it dairy free! Instead, I used Simple Mills organic vanilla icing to be dairy free and we mixed it with Plant-based food coloring to achieve the colors.

We consider this dairy free in our house because there is no cow’s milk or cheese, and small amounts of butter doesn’t cause issues for us.  This recipe does call for a small amount of butter, but this can be subbed for ghee (ghee may be a good choice for people who are lactose-intolerant, as it contains extremely low levels of lactose and casein (a milk protein)) or coconut oil if you are strictly dairy free.  

Organic Gluten & Dairy Free Smash Cake

WHAT YOU NEED:

**make sure all ingredients are organic for an end result organic cake

1/2 cup unsweetened apple sauce or an apple and an electric pressure cooker

2 eggs at room temperature

1 tsp vanilla extract

1/4 cup water or your favorite non-dairy milk

2 tbsp whole flaxseed

6 tbsp unsalted butter cut into 1/2″ slices, soft but not totally melted (can be subbed for ghee or coconut oil, see notes on recipe)

1.5 cups old fashioned oats

1 tsp aluminum free baking powder

A dash of cinnamon

Simple Mills organic vanilla icing

Plant-based food coloring

WHAT YOU DO:

Baking instructions via The Artisan Life healthy smash cake recipe.

  1. Preheat the oven to 350 degrees.
  2. Grease two 5 or 6 inch cake pans or three 4-inch pans and coat lightly with flour, tapping out any excess.
  3. Combine the eggs, water, vanilla, and applesauce in your blender pitcher.
  4. Sprinkle the flaxseeds on top and allow to sit for 10-15 minutes.
  5. Add the butter and blend until it is combined and the flaxseeds are fully ground.
  6. Add the oats and baking powder and blend until the oats are fully incorporated.
  7. Divide the batter evenly between prepared cake pans. You may need to use a spoon or spatula to encourage the batter to the pan’s edges.
  8. Bake until a toothpick inserted in the center of the cake comes out clean. Pans and ovens vary so watch your cakes as they bake, about 18-25 minutes.
  9. Let cakes cool before icing.
  10. For the icing, add the food coloring to the icing and ice as you would like!

This organic gluten & dairy free smash cake is so sweet without all of the sugar and is perfect for a one year old's birthday!
