How to Make the Best Southern-Style Potato Salad

Growing up, my mom knew how to make the Best Southern-Style Potato Salad. She used to say it wasn’t a real cookout unless there was enough for leftovers, and she was right!

My great-grandmother even used to say it tastes even better the following day, as it needed time to “get familiar” in the fridge. I have to say I agree! When the ingredients have time to sit together it makes it tastes that much better! I always make sure to make a huge batch for any family function. This recipe is my spin on that nostalgic classic, with just the right balance of crisp and tangy.

When it comes to potlucks, cookouts, or family get-togethers, this Southern-style potato salad is my go-to side dish. It’s easy to make, tastes even better when prepped the night before (I love any dish I can prep before the party starts), and it always gets compliments. Creamy, tangy, and just the right amount of crunch, it’s one of those classic recipes that feels like home! Plus, it pairs perfectly with just about anything on the summer table.

Southern Style Potato Salad

Ingredients
  

  • 1 Bag Russet Potato's, peeled and boiled
  • 3/4 Cup Mayonnaise you can add more or less based on preference, I like the Primal Kitchen or Chosen Foods brands
  • 2 Tablespoons Dijon Mustard
  • 2 ribs Celery, finely chopped
  • 1/4 Red Onion, finely Chopped
  • 1/2 Cup Sweet Relish We love the Wickles Brand
  • 3 Hard Boiled Eggs, peeled and chopped
  • 1/4 Teaspoon Black Pepper
  • 1/2 Teaspoon Salt

Instructions
 

  • COMBINE Mayonnaise, mustard , relish, salt, and pepper in large bowl.
  • Add potatoes, celery, and onion toss with spatula until well combined .
  • Place in fridge and allow to cool for at least one hour. Is best if prepared the night before and refrigerated overnight. Serve chilled.
  • Optional- lightly sprinkle with smoked paprika before serving
