Spiced Pumpkin Bread

This Spiced Pumpkin Bread is a classic and simple, and not overly sweet. It can be enjoyed with a cup of coffee at breakfast or after dinner as a festive treat!

- 1 can pumpkin puree 15 oz can
- 1/2 cup avocado oil can also use olive oil
- 2 eggs
- 2 cups flour
- 1 cup sugar or 1/2 cup for less sweet
- 1 tsp vanilla
- 1 T cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- 1/8 tsp ground ginger
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup nuts or chocolate chips (optional)
grease a two loaf pans with butter and set aside (I actually like to use one loaf pan and use the rest of the batter in a muffin pan)
preheat oven to 325
In bowl, mix together oil and sugar
add eggs, pumpkin puree, and vanilla and mix until well combined
whisk in flour, spices, baking soda, baking powder, salt until combined (no not over mix!)
pour mixture into greased pans and cook for 45 min- 60 min (use toothpick to test the center, insert a wooden toothpick near the center of the bread, it is done when the toothpick comes out clean) Allow the loaves to cool for 5-10 minutes and then transfer to a cooling rack to complete cooling
