slice the boiled eggs in half, remove yolks and place in a mixing bowl. Set aside egg whites on a tray for later
mix the egg yolks, mayonnaise, mustard, relish & onion together in a bowl. You can mash with with I fork until with combined, or use an electric mixer for a smoother consistency. You can add more mayonnaise at this time If needed for consistency
spoon the mixture into a piping bag (or a gallon zip lock bag and snip the corner)
carefully fill each egg white with the egg mixture
sprinkle with smoked paprika to garnish
Notes
This recipe is best if made a few hours ahead of serving or even the day before. This will allow the flavors time to "get familiar" :)
